As a bonus, I am including Auntie Wendy's Confetti
Cous Cous recipe:
Chicken broth--substitute the broth for the water when following the directions on the box, but add about 1/4 c. more water
cous cousbutter
salt
1/4-1-2 tsp. cinnamon
about 1/3 c. dried fruit per cup of broth (
craisins,
raisins, chopped apricots etc.)
corn
nuts
simmer broth, butter, salt, cinnamon, dried
fruit for 2 minutes. Stir in
cous cous, corn and nuts. Let sit until absorbed--about 5 minutes.
I use whole wheat
cous cous. In one serving there are 6 grams of fiber--and that doesn't include the corn, nuts, or dried fruit.
